Week #4 — Note from the Farmer

Dear CSA Member,

Goodbye Spring and Hello Summer! You will notice a little taste of summer in your CSA shares this week. The first harvest of Summer Squash!
The lettuces are still coming on strong. It won’t be that much longer until the lettuce is suddenly gone until the fall. Lettuce will not grow well in the hot months of July and August. Fill your salad bowls and enjoy them while they last!

The online marketplace is open! We have vegetables and herbs available this week in bulk. Great for freezing, or drying. We also have local honey, maple syrup, organic sriracha sauce, organic dry beans and more! Login to your member account to place your order. All marketplace orders will be delivered with your CSA shares. Please order by 1 pm the day before your CSA pickup to guarantee your delivery.

Sugar Snap Peas: YUM! Picking these delicious peas is a very time-consuming job. It takes our full workforce a solid work day to pick these peas for the CSA. We hope you enjoy! To prepare these peas, you must first remove the strings. There are two strings per pod. One on each end that you should peel off. Sugar Snap peas can be eaten raw as a snack or cooked for with a delicious meal. Sautéed Sugar Snaps

Escarole: A member of the leafy chicory family. Can be eaten raw or cooked. Mix with other greens for a salad, sauté, or braise with white beans. Escarole and White Bean Soup      Escarole 101

Garlic Scapes: The flower bud of the garlic. The scape gets removed in late June to encourage the garlic bulbs to thicken up for our fall harvest. Enjoy as you would garlic.

Storage Tips:
Spinach, Escarole & Lettuces – Washed, in a salad spinner or, in a plastic bag with a paper towel.
Sugar Snap Peas: Unwashed in the refrigerator crisper drawer. Wash when ready to use.
Purslane: Wrap it in a towel then place in a loosely closed plastic bag and refrigerate for up to a few days.
Summer Squash: In the refrigerator crisper drawer.
Garlic Scapes: In a plastic bag, in the refrigerator. Will keep for two to three week.

Week #23 — Note from Farmer — About Brussel Sprouts and Evercrisp Apples — Sign up for next year

Dear CSA Member,

We have received a good amount of rain this past week and, now that the fields have dried out we are taking full advantage. We have been cleaning up the fields and preparing them for the winter months. Today we are planting garlic for the 2018 season!

The 2018 season is now open and we would like to Thank all the members that have signed up already! We are running an early signup special $15 off your standard vegetable share. Brussels Sprouts: This week you will be getting Brussels Sprouts. Below is information on how to prepare the Brussels Sports.

Use a paring knife to separate the sprout from the stalk.
Trim the base of each sprout close to the bottom but, not too close that the sprout starts to come apart.

3. Peel away and discard any browning or blemished leaves.
4. You are now ready to cook the Brussels Sprouts.

Fruit Share Members: This week you will be getting a specialty apple in your share. It is called the Evercrisp Apple. The Evercrisp Apple is a cross between a Fuji and a Honeycrisp Apple. The farmer told us that if you left the apple in the refrigerator they taste more like a Fuji and if left out on your table they taste more like a Honeycrisp!

Week# 19 — Note from Farmer, Mizuna, Mustard Green, Arugula Salad Recipe, Celeriac Recipes, Kale Recipes, Seed Oils

Dear CSA Member,

The weather has been unpredictable these past few weeks. It has gone from 80 degrees one week to frost the next. We are now heading back into another warm trend! The fall leaves are at a standstill and are still mostly green. This week was the first harvest of Sweet Potatoes! They look beautiful but haven’t been washed to help keep for members. (read below) We also harvested Pop Corn this week! The PopCorn is harvested and is put in the greenhouse to dry. It takes a few weeks before the popcorn is ready to POP! It will be ready for your share in a few weeks!

Sweet Potatoes: The sweet potatoes WILL need to be washed. They were harvested right from the fields and packed for your share. The sweet potatoes will keep a little longer if they do not get wet.
The Sweet Potatoes have a very thin skin that you are able to eat when cooked (you do not have to peel them). Whipped Sweet Potatoes taste great with a drizzle of Butternut Squash or Roasted Pumpkin seed oil on top.

Curly Kale and Beets: Curly Kale aka. Winter Bor / Starbor Kale will be in your share this week as well. Our favorite kale recipe here on the farm is Roasted Beet and Kale Salad With Maple Candied Walnuts This is a beautiful and tasty salad. This salad calls for Maple Syrup and Honey that are available through the online marketplace.

Greens: Arugula, Mizuna and Mustard
SALAD OF FIELD GREENS, GORGONZOLA, PEAR & TOASTED WALNUT

5 ounces pre-washed salad greens
1 ripe pear, cored and thinly sliced into bite-sized pieces
1/2 cup toasted walnut halves
4 ounces gorgonzola or other blue cheese, crumbled or shaved

Vinaigrette (makes 1/2 cup)
3 Tbsp pumpkin seed oil
3 Tbsp extra virgin olive oil
1/2 teaspoon Dijon mustard
1 Tbsp + 2 Teaspoons lemon juice
1/4 teaspoon salt
Pepper to taste

Make the vinaigrette: with fork or small whisk combine oils and mustard in small bowl. Gradually add lemon juice until combined. Season with salt and pepper. Set aside.

In large bowl, combine greens, walnuts, sliced pear. Immediately before serving, toss greens with vinaigrette until lightly coated. Toss in crumbled blue cheese.

Week #3 — Note from the Farmer

Dear CSA Member, 
Refrigerators will continue to be full of spring greens this week.  There is nothing that can beat a salad spinner this time of year.  Your lettuce will last up to a week in the salad spinner or in a plastic bag.  We are expecting heavy rains these next couple of days.  We give all the lettuces a good rinse before we send them but with all the rain coming they will need a good wash when you get them home.  You can chop the ends of the lettuce off and rinse the lettuce under cold water.  You will be getting purslane this week.  Purslane makes a great addition to a salad and is a rich source of omega- 3s.  Enjoy the spring lettuces and greens while they last because we will soon be moving into the summer veggies such as cucumbers, squash, and tomatoes.  Everything is looking beautiful!
This week you will be getting Garlic Scapes.  Each year the Garlic Scapes are harvested off the tops of the garlic plant.  The scape grows from the center of the above ground portion of the garlic plant.  This allows the plant to concentrate on growing large garlic bulbs.  We have a great Garlic Scape Pesto recipe on our website.  You can also substitute your favorite basil pesto using this recipe.  https://www.stoneledge.farm/csa-program/recipes/garlic/126-garlic-scape-pesto  
Kohlrabi will be in your share this week as well.  You should always peel your kohlrabi before preparing your meal.  You can add Kohlrabi to soups, stews, roasted and steamed.  Don’t forget to use the greens.  The greens have a very similar taste to collard greens.  They can be eaten raw in a salad or cooked.

Week #3 — Note from the Farmer

Dear CSA Member

This is a very busy time on the farm. The harvest is now well underway but there are greenhouses full of seedlings needing to be transplanted for fall. Weeds are trying to make a hold and there is constant cultivation to keep them under control. It is hard to keep up with all that needs to be done day to day. It is also a wonderful time of year when months of work which was started in February is ready for harvest.

This is salad season. It comes and goes quickly so enjoy the greens of spring. The Romaine can be grilled, Lettuce Soup recipe is on the farm website and if you are invited to dinner or a party, volunteer to bring the salad! This week the lettuces are beautiful. The lettuce is mature but still sweet and tender. Frisee Endive is new this week. Finely serrated leaves are great in a salad.

Summer Spinach is a staple on the farm and the first delivery will come in your share this week.

It seems a bit early but you may like to make a note on your calendar that the Fall Farm Festival will be held September 3 this year. It is a great day to share with family and other CSA members on the farm.
